The zest of citrus in any meal makes my mouth water. Add some juicy tender fall apart chicken with bursts of some tangy citrus and garlic fabulousness and you have one happy mama. Perfect to throw in before picking up the kiddos from school or to put in the crock pot before going to work for the day, this meal will sure to please the masses.
And that’s just the beginning.
I love to give kudos to any recipe that is fool proof easy and can just be a set it and forget it meal. Extra kudos if it is just as good the next day for leftovers. This little nod to some of my favorite cuisine does both without fail. My children are super excited when its Cuban night. The tangy mouthwatering flavors are ones even the pickiest eaters will have a hard time turning away. Shred it up for the small kiddos or have it
The main ingredients are simple- just orange juice and lime with garlic and onion. Pour them over browned chicken and go run those errands that are on your to do list. (Return those pants that your child grew out of before they even wore them, take an extra few minutes in the shower, or just go and relax. Ha! )
After running your marathon of the day you will be able to look forward to your pre-planning with a delicious juicy and crowd pleasing spread. Add some tasty black beans and rice as a side to be authentic and plate it up. Garnish with some fresh flat leaf parsley and lime wedges and boom! Your multitasking will be a thing of beauty.
