Nothing marks family time better than a good ol’ fashioned s’more. The gooey marshmallow mixed with melted chocolate and the graham cracker crust is pretty close to perfection. I can taste a lazy summer evening just thinking about it. The memories flood in and the stories and laughter of a campfire bring a smile to your face.
Sometimes you don’t have a campfire handy. Perhaps its 20 degrees and snowing outside. The kids want to pretend to camp indoors, but having marshmallow all over the fireplace makes you cringe. Or you are just having some major nostalgia hitting you hard.
Never fear! These fabulous bars are more than just a stand in for the original (minus the marshmallow enflambe and chasing your sibling with a gooey marshmallow stick.) The graham cookie crust on these are a force of their own sandwiching the ever favorite chocolate and marshmallow melted perfection.
One of my favorite things to do with them is to put them in the microwave for 10 seconds and have the chocolate and marshmallow melt if you still have some left over on day two. It sparks the marriage of chocolate and marshmallow back up and makes these already irresistible bars out of this world.
These mouthwatering bars are easy to make and just as easy to eat. Just mix together the graham cracker cookie crust, layer with either milk or dark chocolate and add some creamy marshmallow fluff. Top off your masterpiece with another cookie layer. Pop it in the oven and in 30 minutes you have all the reason for a family gathering- indoors. That is if you want to share.Print

1/4 cup sugar
1/2 cup white sugar
1/2 cup butter room temp
1 Large egg
1 tsp vanilla
1 1/3 cup of all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king size milk chocolate bars ( I use hersheys)
1 1/2 cup marshmallow creme ( regular marshmallows won’t work as well)
Preheat oven to 350 degrees.
Grease an 8″ square baking pan and set aside
In a large mixing bowl cream together butter, brown sugar and white sugar until fluffy.
Mix in egg and vanilla
In a small bowl whisk together flour, graham cracker crumbs, baking powder and salt.
Add dry mixture to butter mixture and either hand mix or mix at low speed in a mixer until combined
Divide dough in half and take one half of the dough and press it evenly into the bottom of the greased pan.
Place the King-sized chocolate bars over the dough. They should fit perfectly. Break to fit if using smaller bars.
Spread marshmallow crème over chocolate.
Take remaining dough and make another single layer on top of the marshmallow.
** Tip make the top layer about ½ inch wide by flattening it then place it over marshmallow crème gently. Then push into corners of the pan.
Bake for 30-35 mins.
**Let cool before cutting. Enjoy!
