Spanish inspired simple but flavor-packed chicken in a tomato-based sauce. Nana Virginia’s Spanish chicken is a true reflection of her personality- a straight shooting, no nonsense dish that is sure to please the pickiest of eaters.


3 TBSP olive oil

6 chicken thighs bone in with skin

3 cloves of garlic

8oz tomato sauce

32oz of chicken broth

handful of cilantro destemmed

1 cup white rice


Brown chicken sprinkled with salt and pepper.

Add garlic and chicken broth and tomato sauce

Bring to a boil.

Then add rice and cilantro

Lower to simmer for 20 mins.
