Don’t get me wrong- I have been known to have my fair share of pasta. Unless I’m planning on a two hour plus ride on my bike the next day my guilt factor kicks in big time. Crockpot Chicken Cacciatore is a healthier alternative to enjoy the flavors of Italy-guilt free.

To get my craving fix of Italian cuisine my go to is one of my family favorites- Crockpot Chicken Cacciatore. This easy set it and forget it meal hits all the highlights- tomatoes, flavorful peppers, garlic, red wine and some oregano slow cooked to perfection.
I love whipping this up first thing in the morning when my afternoon kids activity schedule is on the fritz. A little burst of morning motivation and my family will have something fabulously yummy to look forward to after a hectic day. And the bonus- you’re getting your mama checklist done while dinner is simmering down to perfection.

Just give the chicken a little salt and pepper, toss it in a pan with olive oil to brown. Then the magic begins. The smell of pepper, onions, and garlic sauteing will make your mouth start to water. Add a little wine, tomatoes, and oregano and give your chicken something to season in. Bam! Dinner is done. The hardest part is waiting for all the fantastic flavors to cook down so you can enjoy your flavorful Italian feast.

Description
This simple crockpot Chicken Chicken Cacciatore is packed with the classic flavors of Italy and is super easy to make. A few minutes in the morning to prepare and you’ve got dinner!
Ingredients
1/2 tsp salt to taste
1/2 tsp pepper to taste
1 chicken cut into 8 pieces or 5 chicken quarters
1/4 cup Olive Oil
2 Red or Yellow Peppers
1 Yellow Onions
4 Garlic Cloves Minced
3/4 cup Chicken Broth
1 can (28 oz) Crushed Tomatoes
1 TBSP dried Oregano
6 oz Fresh Button Mushrooms Sliced
3/4 cup Dry Red Wine
Instructions
Season chicken with salt and pepper
In a pan, warm the oil
Add the pieces and cook one side for about 7 minutes. Turn and cook on the other side for 3 minutes more.
Transfer pieces to slow cooker.
Return to the pan and add bell peppers onion and garlic.
Saute until soft and fragrant (about 3 minutes.)
Pour in wine and broth and deglaze the pan by scraping sides.
Stir in tomatoes and Oregano. Bring to a simmer.
Pour over the chicken in the crockpot.
Cover and cook on high for 4 hours or low for 8 hours.
10 minutes before serving, add the mushrooms.

Notes
This dish goes excellent with mash potatoes or pasta. If you are on a low carb diet cauliflower rice or mash potatoes are perfect too!
